A desire to be a stay at home mom yet also be able to contribute to the household inspired the idea for a bakery. Utilizing Tennessee's wonderful cottage law, which allows bakers to make goods at home without having to invest in a commercial kitchen, I began baking for sale in the summer of 2024.
Since becoming an Orthodox Christian in 2023, I have developed a love of Greek and Eastern European baking, and it is these recipes I desire to share with my community. Every recipe is steeped in history or purpose, often celebrating a particular holiday or Saint, or just emerging from community spirit. You can read a bit about each recipe and its history on the Menu page. I also bake a lot of traditional American items that I grew up enjoying, and several of my recipes are from the family.
Spyridon's is named after Saint Spyridon the Prosphora baker. Saint Spyridon was a humble monk who lived in the Kiev caves during the 10th century. Illiterate and aged, he happily accepted the obedience of baking Prosphora, the holy bread used during communion. For thirty years, he and his assistant, Saint Nicodemus, labored over a brick oven making the holy bread. Saint Spyridon filled his time with prayer and reciting the Psalter, which he knew by heart. He is accredited with many miracles.
The circular image behind the name comes from the seal used to make Prosphora. This holy bread is made by parishoners and is sealed with a special icon which is used by the Priest when preparing the Eucharist. The word Prosphora means "offering" and it is our hope that all of our baked goods be given as offerings of thanks to God for all He has given us.
I strive to use local ingredients whenever possible, and when these aren't available I look for the cleanest and highest quality I can find.
I use King Arthur artisan bread flour and semolina flour for all my bakes. The bread flour is non-gmo, non bleached and non-bromated and is milled from premium hard winter wheat. The semolina flour is made from extra-hard red wheat and is high in protein and texture. It lends a yellow color and slightly nutty flavor to bread.
Our honey is a truly unique product. Old Fashioned Honey Co. is a small veteran owned family business in Tennessee that produces honey with a special flavor. Many of our recipes include items that are not found in American grocery stores. Mahlepi, mastic gum, orange blossom water, and rose water are all common Greek ingredients that are integral to creating authentic bakes. I purchase most of these items from Titan Foods, who source them directly from Greece.
I love to incorporate local produce into my bakes whenever possible. I often purchase fresh fruit and berries from: Jones Orchard in Millington, Tn, Backermanns Country Store in Whiteville, tn, and Jared Farms in Jackson, tn.
